Spinach Patties

This morning I awoke with a craving for some spinach patties... Something I adapted from some recipe I saw on t.v. along time ago... They are simple,fast,and delicious......Yield 4 patties,serves 2 use as a main meal or side dish.

Spinach Patties:

1 can of spinach,drained well
1, 4 oz. can of mushrooms,drained and chopped (optional)
Half a small onion,diced
One egg
1 cup shredded cheese of choice
Seasoned breadcrumbs, to desired consistency

1- Combine all except bread crumbs.
2- Add crumbs so that it is not too dry nor too moist. That is,that it should hold together nicely without crumbling, or moist enough that it wont cook right....Mix well.
3- Spray a large nonstick skillet with oil. divide mixture into fouths.
4- With spoon flatten each mound,and neaten edges,and spray tops with oil.... fry till golden on one side,with spatula,flip them over and finish frying on the second side....
5- ready to serve (they should not be greasy enough to require draining on paper towels).
